Preparation Method :
- Beat butter, rind, sugar and egg in medium bowl with electric mixer until smooth. Stir in coconut, sifted flour and juice.
- Roll rounded teaspoons of mixture into balls, press 1 side of balls lightly in mixed peel.
- Place balls, peel side up, on greased oven trays. Bake in moderate oven about 15 minutes or until lightly browned. Cool on trays.

- 150 grams shredded coconut
- 250 grams self-raising flour
- 2 tablespoons orange juice
- 150 grams butter
- 2 teaspoons grated orange rind
- 250 grams caster sugar
- 1 egg
- 75 grams mixed peel, finely chopped
