LEMON CREAM BISCUIT

Preparation Method :

  • Filling: Beat the cottage and cream cheese with rind, sugar and yolk until combined; stir in currants.
  • Beat butter, rind and icing sugar in small bowl until smooth. Stir in sifted flours; mix to a firm dough. Knead gently on lightly floured surface until smooth.
  • Roll pastry between sheets of baking paper. Cut into rounds using cookie cutter, place level teaspoons of filling in centre of each round.
  • Brush edge with a little combined yolk and milk, top with another round, place on greased oven trays; brush with more yolk mixture.
  • Bake in moderate oven about 10 - 12 minutes or until lightly browned. Cool on wire racks. Serve dusted with extra sifted icing sugar.

INGREDIENTS

  • 150 grams butter
  • 2 teaspoons grated lemon rind
  • 75 grams icing sugar mixture
  • 150 grams self-raising flour
  • 75 grams corn flour
  • 1 egg yolk
  • 2 teaspoons milk

Filling

  • 50 grams soft packaged cream cheese
  • 2 tablespoons cottage cheese
  • ½ teaspoon grated lemon rind
  • 2 tablespoons caster sugar
  • 1 egg yolk
  • 2 tablespoons currants
