Preparation Method :
- Filling: Combine water, egg yolk, sugar and butter in small pan. Stir in blended corn flour and juice, stir over heat or until the mixture boils and thickens, cover and cool.
- Beat butter, essence and sugar in small mixing bowl until smooth. Stir in sifted flour and enough water to mix to a soft dough.
- Knead gently on lightly floured surface until smooth; cover, refrigerate 30 minutes.
- Roll dough between sheets of baking paper. Cut into small rounds, cut the centres from rounds. Roll remaining dough between sheets of baking paper. Cut into rounds.
- Place all rounds on greased oven trays; brush cut out rounds with egg white, sprinkle with coconut, bake in moderate oven about 10 minutes or until lightly browned. Cool on trays.
- Sandwich rounds and cut out biscuits together with filling.

- 50 grams caster sugar
- 1 tablespoon water
- 1 egg white

- 1 tablespoon lemon juice
- 2 tablespoon soft butter
- 100 ml water
- 1 egg yolk
