ITALIAN WALNUT BISCUITS

Preparation Method :

  • Blend or process almonds until finely chopped, add egg white, sugar and rum; process until combined.
  • Transfer the mixture to medium bowl, add sifted flour, mix to a soft dough.
  • Knead gently on lightly floured surface until smooth. Roll dough between sheets of baking paper.
  • Cut dough into rounds using cookie cutter and place on greased oven trays; brush with extra egg white; sprinkle with walnuts.
  • Bake in hot oven about 10 minutes or until lightly browned; cool on wire racks.

  • 75 grams walnuts, finely chopped
  • 100 grams caster sugar
  • 250 grams blanched almonds
  • 2 egg white, lightly beaten,
  • 2 tablespoons dark rum
  • 100 grams plain flour
