Preparation Method :
- Lemon Icing: Sift icing sugar into small heatproof bowl, stir in rind and enough juice to give a soft paste. Stir over hot water until spreadable.
- Sift flour into medium bowl, rub in lard. Combine the milk and sugar in small pan, stir over low heat until sugar is dissolved, add essence; cool 5 minutes.
- Stir warm milk mixture and egg into flour mixture in bowl; mix to a soft dough, knead gently on lightly floured surface until smooth.
- Roll rounded teaspoons of mixture into sausages.
- Twist 2 sausages together, make into circles; press edges together, place on greased oven trays.
- Bake in moderate oven about 10 - 12 minutes or until lightly browned. Cool 10 minutes on trays.
- Dip tops of biscuits into lemon icing; leave to set on wire racks.

- 50 grams lard, chopped
- 2 tablespoons milk
- 75 grams caster sugar
- ½ teaspoon vanilla essence
- 1 egg, lightly beaten

- ½ teaspoon grated lemon rind
- 2 teaspoons lemon juice
