HONEY LEMON BISCUITS

Preparation Method :

  • Icing: Sift icing sugar into small heatproof bowl, stir in honey and enough juice to make a stiff paste. Stir over hot water until spreadable.
  • Beat butter and honey in small bowl until smooth. Stir in sifted dry ingredients, bran and enough water to mix to a soft dough.
  • Knead gently on lightly floured surface until smooth. Roll dough between sheets of baking paper.
  • Cut dough into rounds using cookie cutter, place on greased oven trays.
  • Bake in moderate oven about 10 - 12 minutes or until lightly browned. Cool on wire racks.
  • Spread biscuits with icing; leave to set on wire racks.

INGREDIENTS

  • 20 grams unprocessed wheat bran 
  • 50 grams butter
  • 150 grams wholemeal self-raising flour
  • 40 grams white plain flour
  • 50 ml honey
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • 1 teaspoon water

Icing

  • 2 teaspoons lemon juice
  • 100 grams icing sugar mixture
  • 1 teaspoon honey
