Preparation Method :
- Icing: Sift icing sugar into small heatproof bowl, stir in honey and enough juice to make a stiff paste. Stir over hot water until spreadable.
- Beat butter and honey in small bowl until smooth. Stir in sifted dry ingredients, bran and enough water to mix to a soft dough.
- Knead gently on lightly floured surface until smooth. Roll dough between sheets of baking paper.
- Cut dough into rounds using cookie cutter, place on greased oven trays.
- Bake in moderate oven about 10 - 12 minutes or until lightly browned. Cool on wire racks.
- Spread biscuits with icing; leave to set on wire racks.
INGREDIENTS
- 20 grams unprocessed wheat bran
- 50 grams butter
- 150 grams wholemeal self-raising flour
- 40 grams white plain flour
- 50 ml honey
- ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- 1 teaspoon water
Icing
- 2 teaspoons lemon juice
- 100 grams icing sugar mixture
- 1 teaspoon honey
