Preparation Method :
- Icing: Place egg white in small bowl, stir in half the sifted icing sugar.
- Add remaining sifted icing sugar, flour and enough juice to make a thick spreadable icing. Tint half the icing with food colouring.
- Jumbles : Combine butter and golden syrup in medium pan, stir over heat until butter is melted, bring to boil, remove from heat; stand 10 minutes.
- Stir in sifted dry ingredients and milk, cover; stand 2 hours.
- Knead mixture gently on floured surface until it is no longer sticky.
- Roll quarter of the mixture on lightly floured surface into a sausage. Cut into 6cm logs. Repeat with remaining mixture.
- Place the logs on greased oven trays; gently round the blunt ends of logs.
- Bake in moderate oven about 10 minutes or until just firm. Cool on trays. Spread jumbles with icing, leave to set on wire racks.

- 250 grams plain flour
- 50 grams butter, chopped
- 150 ml golden syrup
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground mixed spice
- ¼ teaspoon ground cloves
- 1 tablespoon milk
Icing
- 250 grams icing sugar mixture
- 2 teaspoons plain flour
- 1 egg white, lightly beaten
- 2 teaspoons lemon juice
