Preparation Method :
- Royal Icing: Beat egg white in small bowl with electric mixer until frothy, gradually beat in enough sifted icing sugar to give a mixture of piping consistency.
- Colour as desired. Keep royal icing covered with damp cloth to prevent drying out.
- Beat butter, sugar and yolk in small bowl until smooth.
- Stir in sifted dry ingredients and golden syrup; mix to a soft dough, knead gently on lightly floured surface until smooth.
- Roll dough between sheets of baking paper until thick.
- Cut gingerbread shapes from dough using cutter.
- Place gingerbread shapes on greased oven trays. Bake in moderate oven about 10 minutes or until lightly browned. Cool on trays.
- Spoon icing into piping bag fitted with a small plain tube, decorate shapes as desired.

- 400 grams plain flour
- 125 ml golden syrup
- 150 grams butter
- 1 teaspoon baking soda
- 3 teaspoons ground ginger
- 1 egg, separated
- Few drops of food colour
