Preparation Method :
- Topping: Beat in the eggs, essence and sugar in small bowl until thick and creamy. Fold in sifted flour and baking powder; then coconut and fruit mince.
- Beat butter and sugar in small bowl until smooth, stir in sifted flour.
- Press the mixture over base of greased rectangular slice pan, bake in moderate oven 10 minutes.
- Spread hot base with topping, bake in moderate oven further 30 minutes or until firm. Cool in pan.
- Serve dusted with sifted icing sugar.
