TUNA BAKE

Preparation Method :

  • Preheat the oven to 180°C (350°F/Gas 4). Cook the pasta in a large saucepan of boiling salted water until aldente. Drain.
  • Lightly grease a 2 litre (70 fl oz / 3 cup) ovenproof dish. Combine the egg, spring onion, dill and lemon juice and season.
  • Melt 60 grams (2 ¼ oz) of the butter in a saucepan, add the curry powder and cook for 30 seconds. Stir in the flour and cook until foaming.
  • Remove from the heat, gradually stir in the milk and cream, then return to low heat and stir constantly until the sauce boils and thickens.
  • Simmer for 2 minutes, then stir in the mayonnaise. Combine the sauce, pasta, tuna and egg mixture and spoon into your dish.
  • Melt the remaining butter in a frying pan, add the breadcrumbs and garlic and cook, stirring, for 1 minute, or until the breadcrumbs are golden.
  • Stir in the parsley and parmesan, then sprinkle over the tuna mixture. Bake for 15-20 minutes.

INGREDIENTS

  • 200 grams (7 oz) short curly pasta such as cotelli or fusilli
  • 4 eggs, hard-boiled and roughly chopped
  • 4 spring onions (scallions), finely chopped
  • 1 tablespoon chopped dill
  • 1 tablespoon lemon juice
  • 115 grams (4 oz) butter
  • 3 teaspoons madras curry powder
  • 4 tablespoons plain (all-purpose) flour
  • 375 ml (13 oz / 1 ½ cups) milk
  • 375 ml (13 fl oz /1 ½ cups) pouring (whipping) cream
  • 175 grams (6 oz) whole-egg mayonnaise
  • 3 x 210 grams (7 ½ oz) tins tuna, drained
  • 160 grams (5 ¾ oz / 2 cups) fresh white breadcrumbs
  • 1 garlic clove, crushed
  • 1 tablespoon finely chopped flat-leaf (Italian) parsley
  • 2 tablespoons grated parmesan cheese
