BAKED SPICY FISH

Preparation Method :

  • Make two squares of doubled aluminium foil 10 inches x 10 inches and grease the inner surface with a little oil.
  • Season the fish, then smear the curry paste evenly over both sides. Place in the middle of foil squares, sprinkle each with the spices and coriander.
  • Drizzle half the oil over each steak. Seal in the foil by crimping together, so that the parcel is airtight but loose.
  • Marinate in the fridge at least for about 20-30 minutes. Bring back to room temperature before cooking.
  • Preheat the oven to 190°C/375°F/Gas 5. Place the parcels on a baking tray and bake for 6-8 minutes.
  • Open the parcel to allow any excess liquid to dry off and continue baking for another 5 minutes or until the fish is done. Drizzle over lemon juice to taste and serve hot.

INGREDIENTS

  • 150 grams thick-cut fish steaks, rinsed and dried
  • ¼ teaspoon each of freshly ground black pepper, garam masala and red chilli powder
  • A pinch of fenugreek seeds, pounded
  • 50 grams Curry Paste
  • 1 teaspoon Cooking oil
  • Salt to taste
  • Lemon juice to taste
  • 2 tablespoon chopped fresh coriander leaves and stalks
