BAKED SOLE WITH OYSTERS

These bakes sole with oysters are a perfect fit to your daily servings. The dish is made up of butter, celery, plaice fillets, white wine and other flavorings. With its cream sauce, this menu becomes more palatable and really solves your food cravings.

Preparation Method :

  • Melt the butter in a pan and sauté the celery, parsley and onion until soft. If using bottled oysters, drain them and reserve 4 tablespoons liquor.
  • Chop the oysters. Add the oysters and breadcrumbs to the pan and stir over a moderate heat for 30 seconds, then remove.
  • Sprinkle the fish fillets lightly with salt and divide the stuffing equally between them. Roll up and secure the ends with wooden cocktail sticks (toothpicks).
  • Arrange the rolls in a greased shallow baking dish and pour the wine and reserved liquor or water over them.
  • Cover and bake in a preheated moderate oven (180°C/350°F, Gas Mark 4) for 20 minutes or until the fish flakes easily.
  • Sprinkle lightly with pepper and remove to a warmed serving dish. Reserve the cooking liquid to make the sauce.
  • Melt the butter in a pan, add the flour and cook for 1 minute.
  • Stir in the reserved cooking liquid from the fish and the cream, and cook over a gentle heat for a minute until the sauce thickens. Check for seasoning and spoon over the rolls.
  • Serve at once, sprinkled with parsley, with boiled potatoes and broccoli.

INGREDIENTS

  • 100 grams butter
  • 2 stick celery, finely chopped 
  • 2 tablespoon chopped parsley 
  • 2 tablespoon chopped onion 
  • 12 fresh, bottled or canned oysters 
  • 50 grams fresh white breadcrumbs 
  • 8 small sole or plaice fillets 
  • Salt and freshly ground pepper 
  • 8 tablespoons dry white wine
  • 8 tablespoons oyster liquor or water chopped parsley to garnish

Cream Sauce

  • 30 grams butter
  • 2 tablespoon plain flour
  • 8 tablespoons single cream
