BAKED COD WITH HOLLANDAISE SAUCE

Preparation Method :

  • Preheat the oven to 200°C/400°F/ Gas 6. Brush both sides of the cod with oil and lemon juice.
  • Season, then mix together the crumbs, nuts and seasoning and press on to the fish. Place on a baking tray and bake for 20 minutes.
  • Meanwhile, prepare the hollandaise sauce. Simmer the lemon juice with water in a small pan for a couple of minutes until reduced by at least half. Cool slightly.
  • Whisk in the egg yolks, then, over a very gentle heat, add the butter in a slow stream, whisking all the time. Keep whisking until glossy and thick, then season to taste. Keep warm over a pan of hot water, until ready to serve.
  • Top the fish with the sauce and garnish with dill. Serve with chips and a mixed leaf salad.

INGREDIENTS

  • 6 cod steaks or cutlets
  • A little sesame oil
  • A squeeze of lemon juice
  • 2 tablespoon fresh white breadcrumbs
  • 2 tablespoon roughly ground hazelnuts
  • Salt and ground black pepper
  • A few sprigs of dill, to garnish
  • Chips and mixed leaf salad, to serve
  • For the hollandaise sauce
  • 3 tablespoon lemon juice
  • 4 egg yolks
  • 100 grams butter, melted and cooled slightly
