Preparation Method :
- The Filling: Mix all the ingredients for filling in a large bowl.
- The Pastry: Sift flour and salt into a mixing bowl. Rub in butter until mixture resembles breadcrumbs. Add a little water at a time and knead until smooth.
- Divide pastry into 10-12 equal portions. Roll out each piece and cut into disc.
- Divide filling equally among pastry rounds. Dampen the edges and fold in half to form semi-circular pastries. Seal edges well and crimp to make a frill.
- Arrange pasties on well-greased baking trays. Prick and glaze with egg yolk.
- Bake in a preheated oven at 190°C / 375°F / Gas mark 5 for 18-20 minutes or until golden. Serve warm.

- 250 grams onions, peeled and chopped
- 150 ml strong beef stock
- 100 grams corn kernels
- 1½ teaspoon salt
- 1 teaspoon ground black pepper

- 500 grams plain flour
- 250 grams butter
- 145 ml water
- 1½ teaspoon salt
- 1 egg yolk, beaten
