SURPRISE BAKED POTATOES

1 hour 15 minutes

Preparation Method :

  • Scrub and dry the potatoes and bake in a preheated moderately hot oven (190°C/375°F, Gas Mark 5) for 1 hour.
  • Cut a slice from the top of each potato, scoop out the flesh and mash. Stir in the cream or butter, egg yolk and salt and pepper to taste.
  • Half fill each potato shell with the mixture. Mix the peas with the chives and divide equally between the potatoes.
  • Pile the rest of the potato on top, sprinkle with cheese, and return to the oven for 12 minutes until heated through and browned on top.

INGREDIENTS

  • 4 medium potatoes
  • 8 tablespoons single cream
  • 100 gram butter
  • 2 egg yolk
  • Salt and freshly ground pepper
  • 200 grams cooked green peas
  • 2 tablespoon chopped chives
  • 4 tablespoons grated cheese
