SURPRISE BAKED POTATOES

Preparation Method :
- Scrub and dry the potatoes and bake in a preheated moderately hot oven (190°C/375°F, Gas Mark 5) for 1 hour.
- Cut a slice from the top of each potato, scoop out the flesh and mash. Stir in the cream or butter, egg yolk and salt and pepper to taste.
- Half fill each potato shell with the mixture. Mix the peas with the chives and divide equally between the potatoes.
- Pile the rest of the potato on top, sprinkle with cheese, and return to the oven for 12 minutes until heated through and browned on top.

- 4 medium potatoes
- 8 tablespoons single cream
- 100 gram butter
- 2 egg yolk
- Salt and freshly ground pepper
- 200 grams cooked green peas
- 2 tablespoon chopped chives
- 4 tablespoons grated cheese
