Preparation Method :
- Preheat the oven to 180°C / 350°F / Gas Mark 4.
- Prick the potato, bake it until tender.
- Halve the potato and scoop the pulp out of the shell and put into a bowl, mash.
- Add in all the remaining ingredients to the mashed potato. Season well, then spoon into the potato skins.
- Return to the oven for 10 minutes or until the filling turns golden.

- 1 tomato, chopped roughly
- 1 medium baking potato
- 2 ½ tablespoon low- fat soft cheese
- 1 teaspoon whole grain mustard
