STUFFED BAKED POTATO

Preparation Time :
25 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Preheat the oven to 180°C / 350°F / Gas Mark 4.
  • Prick the potato, bake it until tender.
  • Halve the potato and scoop the pulp out of the shell and put into a bowl, mash.
  • Add in all the remaining ingredients to the mashed potato. Season well, then spoon into the potato skins.
  • Return to the oven for 10 minutes or until the filling turns golden.

INGREDIENTS

  • 1 tomato, chopped roughly
  • 1 medium baking potato
  • 2 ½ tablespoon low- fat soft cheese
  • 1 teaspoon whole grain mustard
