POTATO AND CARROT LAYER

Preparation Method :

  • Add the milk and half the butter with the mashed potatoes. Adjust seasoning with salt and pepper to taste.
  • Heat the remaining butter and fry onion gently until soft. Stir in carrots, walnuts, lemon juice, water and sultanas. Simmer gently for 10 minutes until carrots are just tender.
  • Grease a large ovenproof dish. Spread half the mashed potatoes in dish and top with carrot mixture. Top with remaining mashed potatoes.
  • Bake in a preheated oven at 180°C / 350°F/ Gas mark 4 for 20-22 minutes. Garnish with sultanas and walnuts. Serve immediately. 

INGREDIENTS

  • 750 grams Carrots, peeled and cut into small cubes
  • 1.5 kg Potatoes, cooked, drained and peeled
  • 2 tablespoon Water
  • 75 grams Onion, peeled and chopped
  • 50 ml Milk
  • 2 tablespoon Butter
  • 3 teaspoon Lemon juice
  • 50 grams Walnuts, shelled and chopped
  • 50 grams Sultanas
  • Ground black pepper and salt to taste
  • Sultanas and walnuts, to garnish
