NEW POTATOES AND FENNEL

Preparation Method :

  • Heat the butter in a pan. Stir in paprika and add potatoes, sauté for about 3-5 minutes or until the potatoes begin to brown on all sides.
  • Transfer to a baking dish and cover with a lid or aluminium foil. Bake in a preheated oven at 190°C / 375°F / Gas mark 5 for about 25-30 minutes.
  • Add the chopped fennel and mint leaves. Adjust seasoning with salt and pepper. Mix and cook for another 10-12 minutes.
  • Remove the baking dish from oven and stir potatoes, make sure not to cut potato skins. Garnish with fennel leaves and serve immediately. 

INGREDIENTS

  • 1 kg baby potatoes, washed, dried and unpeeled
  • 5 tablespoon butter
  • ½ teaspoon sweet paprika
  • 1 fennel bulb, small, finely chopped
  • 2 sprigs mint leaves, finely chopped
  • Fennel leaves
  • Salt and pepper, to taste
