DUCHESSE POTATOES

Preparation Method :

  • Place the potatoes to dry pot and shake over low heat for about a minute or two.
  • Shake the pot to prevent potatoes from sticking to the bottom of pot.
  • Add butter while potatoes are warm. Beat with a wooden spoon until mixture is very smooth.
  • Mix egg gradually into potato mixture. Adjust seasoning with salt and pepper.
  • Grease a baking tray. Spoon potato mixture into a piping bag fitted with a ¼ inch star nozzle and pipe rosettes onto baking tray.
  • Bake in a preheated oven at 180°C / 350°F / Gas mark 4 for about 15-20 minutes or until golden.

INGREDIENTS

  • 500 grams Potatoes, peeled, thickly sliced, cooked and drained
  • 3 teaspoon Butter
  • 1 Egg, large, lightly beaten
  • Ground white pepper and salt to taste
