Preparation Method :
- Sift flour, baking powder, salt and mustard powder into a large bowl. Rub in butter until mixture resembles breadcrumbs. Stir in cheese until thoroughly mixed.
- Sieve mashed potatoes into flour mixture and mix together with a round-bladed knife.
- Beat egg with milk and pour slowly into potato mixture while mixing, add just enough liquid to form soft dough.
- Turn dough out onto a well-floured surface and knead lightly. Roll dough into a 1 inch thick sheet.
- Cut out scones using a 3 inch round cutter and place scones on a greased baking tray.
- Bake in a preheated oven at 190°C / 375°F / Gas mark 5 for 15-17 minutes or until golden brown. Cool for a few minutes on a wire rack, serve warm.

- 100 grams mature cheddar cheese grated
- 2 teaspoon baking powder
- 1 tablespoon milk
- A pinch mustard powder
- 25 grams diced butter
- 1 small egg
- ½ teaspoon salt
- Cooking oil
