CREAMY ONION MINI QUICHES

Preparation Method :

  • Roll out pastry dough thinly and use to line two 13 cm/5 inch fluted tartlet tins. Prick bases, then chill in refrigerator.
  • Heat the butter in a heavy-based pan, add the onions and mace and cook gently for 6 to 10 minutes, stirring occasionally, without browning the onions.
  • In a bowl mix together the milk, cream, and eggs, and add nutmeg and salt and pepper to taste.
  • Spread the onions in the pastry-lined tins, and then pour over the egg mixture.
  • Bake in a preheated moderately hot oven (220°C/400°F, Gas Mark 6) for about 20 minutes until pastry is golden and filling is just set.
  • Serve hot or cold with a crisp mixed salad.

  • 200 grams short crust pastry
  • 50 grams butter
  • 500 grams chopped onion
  • Pinch ground mace
  • 4 tablespoons milk
  • 4 tablespoons double cream
  • 4 eggs
  • Freshly grated nutmeg
  • Salt
  • Freshly ground pepper
