CARROT PARSNIP GRATIN

Preparation Method :

  • Preheat the oven to 180°C/350°F/ Gas 4. Heat the butter in a large frying pan or saucepan until it melts.
  • Add the sliced onion and crushed garlic and cook gently until tender and transparent. Mix in the grated carrots and parsnips, cook for a few minutes, then season with plenty of salt and ground black pepper.
  • Butter a shallow, ovenproof dish and spoon the vegetable mixture into it, smoothing down the top with the back of the spoon.
  • In a large jug, beat the eggs with the cream, nutmeg and seasoning. Pour the egg mixture over the cooked grated vegetables and sprinkle with the breadcrumbs.
  • Place the dish in the oven and bake for about 30 minutes until the gratin is firm to the touch and turning golden brown.

INGREDIENTS

  • 3 tablespoon butter
  • 2 large onion, halved and sliced
  • 2 garlic clove, crushed
  • 400 grams carrots, grated
  • 400 grams parsnips, grated
  • 3 eggs, beaten
  • 200 ml single cream
  • Freshly grated nutmeg
  • 50 grams soft white breadcrumbs
  • Salt and ground black pepper
