BAKED PEPPERS WITH FETA

Preparation Method :

  • Place the peppers under a hot grill for 10 minutes, turning occasionally, until the skins begin to blacken. Cover or place in a sealed plastic bag for 5 minutes to loosen the skin. Remove the skin, core and seeds.
  • Cut the flesh into bite-sized pieces and place in a shallow ovenproof dish. Season with salt and pepper.
  • Combine the garlic, herbs, breadcrumbs and lemon zest. Season with pepper and add the olive oil to bind the mixture together.
  • Scatter the mixture over the peppers. Add the olives and feta cheese.
  • Bake in the oven at 220°C/425°F/gas mark 7 for 15 minutes until crisp.

INGREDIENTS

  • 2 each large red, green and yellow pepper
  • Salt and pepper
  • 4 garlic cloves, chopped very finely
  • 4 teaspoon each finely chopped marjoram and parsley
  • 2 teaspoon finely chopped rosemary
  • 100 grams fresh wholemeal breadcrumbs
  • Grated zest of 1 lemon
  • 5 tablespoon Sesame oil
  • 8 black olives, stoned and sliced
  • 50 grams feta cheese, cut into cubes
