CORONATION CHICKEN POTATOES

Preparation Time :
20 minutes

Cooking Time :
1 hour 30 minutes

Preparation Method :

  • Prick the potatoes and bake in a conventional oven at 190°C/380°F/ Gas Mark 5 for an hour or two.
  • When cooked, whisk together all the sauce ingredients, season and then mix in the chicken.
  • When the potatoes are cooked, cut a cross in the top of each and spoon the chicken and sauce into each potato.

INGREDIENTS

  • 150 grams cold cooked chicken, skinned, boned and diced
  • 350 grams baking potatoes 
  • 2 tablespoons fat-free mayonnaise-style dressing
  • 1 teaspoon medium balti curry paste
  • A dash of Worcestershire sauce
  • 1 teaspoon lemon juice
  • 1 tablespoon half-fat crème fraîche
  • Freshly ground black pepper and salt, to taste
