CORONATION CHICKEN POTATOES

- Prick the potatoes and bake in a conventional oven at 190°C/380°F/ Gas Mark 5 for an hour or two.
- When cooked, whisk together all the sauce ingredients, season and then mix in the chicken.
- When the potatoes are cooked, cut a cross in the top of each and spoon the chicken and sauce into each potato.
INGREDIENTS
- 150 grams cold cooked chicken, skinned, boned and diced
- 350 grams baking potatoes
- 2 tablespoons fat-free mayonnaise-style dressing
- 1 teaspoon medium balti curry paste
- A dash of Worcestershire sauce
- 1 teaspoon lemon juice
- 1 tablespoon half-fat crème fraîche
- Freshly ground black pepper and salt, to taste
