CHICKEN WITH OLIVES AND TOMATOES

Preparation Method :
- Pat dry the chicken with absorbent kitchen paper and season well with black pepper.
- Place in a baking dish and drizzle with the oil.
- Preheat oven to 220°C / 425°F. Bake the chicken, uncovered, for about 20 minutes or until cooked.
- Remove chicken and place on a warm serving dish, spoon over melted butter, set aside and keep warm.
- Drain excess fat from baking dish and add tomatoes and olives.
- Return pan to the oven and bake for 5 minutes or until tomatoes are hot.
- Arrange the tomatoes and olives around the chicken and drizzle over any juices remaining in the pan.
- Serve with steamed new potatoes or crusty bread.

- 2 tablespoon cooking oil
- 500 grams chicken breast halves
- 100 grams tomatoes, peeled, seeded and quartered
- Freshly ground black pepper
- 1 tablespoon butter, melted
- Green and black olives, 8 each
