CHICKEN RAINEY PARK

Preparation Method :

  • Make a white sauce with the oil, flour, milk and water.
  • Heat the oil in a pan, and stir-fry the spring onions and capsicum for 2 minutes, then add them to the sauce.
  • Add the tomatoes, parsley, mustard and red chilli powders, sugar, salt, and cream to the sauce.
  • Spread the chicken in a layer in an ovenproof baking dish; cover with the ham, potatoes and pineapple; sprinkle with a little salt, and then pour the sauce on top.
  • Pour the yolks over the sauce, and spread the whites over the yolks.
  • Bake in a preheated oven at 180 °C (350 °F) for 45 minutes. Serve hot.

INGREDIENTS

  • 1 tablespoon cooking oil
  • 50 grams spring onions, sliced
  • 1 capsicum, sliced
  • 50 grams tomatoes, sliced
  • ½ tablespoon parsley(ajmoda ke patte), chopped
  • 1 teaspoon mustard powder
  • ¼ teaspoon red chilli powder
  • ½ teaspoon sugar
  • salt to taste
  • 50 ml thick cream
  • 300 grams cooked chicken, deboned, diced
  • 50 grams ham, chopped
  • 150 grams potatoes, boiled, cut, fried
  • 50 grams pineapple pieces, cubed
  • 4 egg yolks, beaten
  • 4 egg whites, stiffly beaten

For the white sauce

  • 1½ tablespoon cooking oil
  • 1½ tablespoon flour
  • 300 ml milk
  • 300 ml water or stock
