Preparation Method :
- Preheat the oven to 375°F (190°C/gas 5). Combine the apricots and juice, chicken stock, and apple cider vinegar in a medium saucepan and bring to a boil.
- Arrange the chicken breasts in a baking dish in a single layer and pour in the apricot mixture. Bake for 10 minutes. Remove from the oven and baste with the juices.
- Bake for 15 minutes, basting every 5 minutes.
- Bring a large saucepan of salted water to a boil. Add the rice and cook until tender, 10 minutes. Drain well. Arrange the rice on serving plates, topped with the chicken and sauce. Serve hot.
