Preparation Method :
- Melt the butter with the nutmeg. Press the ricotta cheese through a sieve into a bowl.
- Cut any rind From the Cabrales and crumble it into the bowl.
- Stir in about two-thirds of the butter, the chives and plenty of pepper until evenly mixed.
- Pack the mixture into a shallow dish and spread it level with the back of a spoon.
- Drizzle with the remaining butter and chill for at least 2 hours, or until ready to serve.
- Spoon the cheese on to the toast and serve garnished with extra chives.

- 100 grams butter
- Plenty of freshly grated nutmeg
- 500 grams ricotta cheese
- 200 grams Cabrales cheese
- 4 tablespoons chopped chives, plus extra whole chives to garnish
- Thin slices of seeded or walnut bread, toasted
- Pepper
