POTTED CABRALES

Preparation Method :

  • Melt the butter with the nutmeg. Press the ricotta cheese through a sieve into a bowl.
  • Cut any rind From the Cabrales and crumble it into the bowl.
  • Stir in about two-thirds of the butter, the chives and plenty of pepper until evenly mixed.
  • Pack the mixture into a shallow dish and spread it level with the back of a spoon.
  • Drizzle with the remaining butter and chill for at least 2 hours, or until ready to serve.
  • Spoon the cheese on to the toast and serve garnished with extra chives.

INGREDIENTS

  • 100 grams butter
  • Plenty of freshly grated nutmeg
  • 500 grams ricotta cheese
  • 200 grams Cabrales cheese
  • 4 tablespoons chopped chives, plus extra whole chives to garnish
  • Thin slices of seeded or walnut bread, toasted
  • Pepper
