MUSHROOMS WITH BROAD BEAN PUREE

Preparation Method :
- Peel the mushrooms and place them, stalk sides up, in a shallow ovenproof dish.
- Mix the butter with the garlic and a little salt and pepper and brush over the mushrooms.
- Bake in a preheated oven for 10 minutes.
- Meanwhile, cook the broad beans in plenty of boiling water until tender.
- Drain and cool slightly under running water. Take about a quarter of the beans and pop them out of their shells.
- Put the remaining beans in a food processor with the cheese, mint, half the chives and salt and pepper and blend until smooth, scraping the mixture down from the sides of the bowl.
- Spoon the mixture on to the mushrooms. Scalier with the shelled beans and drizzle with the oil.
- Return to the oven for a further 5 minutes.
- Served scattered with the remaining chives.

- 10 large flat mushrooms
- 100 grams butter, melted
- 4 garlic cloves, crushed
- 200 grams broad beans
- 100 grams light soft cheese
- 4 teaspoons chopped mint
- 10 grams chives
- 2 tablespoon Cooking oil
- Salt and pepper
