MUSHROOMS WITH BROAD BEAN PUREE

Preparation Method :

  • Peel the mushrooms and place them, stalk sides up, in a shallow ovenproof dish.
  • Mix the butter with the garlic and a little salt and pepper and brush over the mushrooms.
  • Bake in a preheated oven for 10 minutes.
  • Meanwhile, cook the broad beans in plenty of boiling water until tender.
  • Drain and cool slightly under running water. Take about a quarter of the beans and pop them out of their shells.
  • Put the remaining beans in a food processor with the cheese, mint, half the chives and salt and pepper and blend until smooth, scraping the mixture down from the sides of the bowl.
  • Spoon the mixture on to the mushrooms. Scalier with the shelled beans and drizzle with the oil.
  • Return to the oven for a further 5 minutes.
  • Served scattered with the remaining chives.

INGREDIENTS

  • 10 large flat mushrooms
  • 100 grams butter, melted
  • 4 garlic cloves, crushed
  • 200 grams broad beans
  • 100 grams light soft cheese
  • 4 teaspoons chopped mint
  • 10 grams chives
  • 2 tablespoon Cooking oil
  • Salt and pepper
