MORCILLA WITH BROAD BEANS

Preparation Method :
- Cook the beans in boiling water for 3-5 minutes until tender. Drain and rinse under cold water.
- Pop the beans out of their skins by pinching them between your thumb and finger.
- Roughly cut the morcilla into 1 inch pieces, discarding the skin.
- Heat the oil in a frying pan, add the onion and morcilla and fry gently, stirring frequently, for 15 minutes or until the sausage is broken down.
- Add the beans, garlic, lemon rind and juice and parsley to the pan and cook for 2-3 minutes until heated through.
- Season with salt and pepper and serve warm.
