- Cut off the fish heads, slit open the undersides and gut the fish.
- Pull away the backbones and rinse the fish under cold running water.
- Arrange the anchovies in a non-metallic dish and cover with the vinegar. Cover and chill overnight.
- Mix together the garlic, parsley, oil and salt and pepper.
- Drain the vinegar from the anchovies and add the garlic mixture.
- Cover and chill for several hours or overnight before serving.

- 4 tablespoons finely chopped parsley
