GRIDDLED STUFFED PITTAS

Preparation Time :
30 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Make a slit along one side of each pitta bread and push the knife inside to make a cavity.
  • Heat the oil in a frying pan and gently fry the pine nuts and garlic for 2 minutes until just beginning to colour.
  • Add the spinach and turn it in the pan until it has wilted.
  • Stir in the cheese and raisins and sprinkle with a little salt and pepper.
  • Remove the pan from the heat and mix the ingredients well together.
  • Pack the mixture into the pitta breads, spreading it to the edges in an even layer.
  • Toast the pitta breads in a panini machine or use a griddle or heavy-based frying pan until lightly browned on both sides.
  • Leave to cool slightly, then halve each pitta.
  • Serve warm.

INGREDIENTS

  • 10 small round pitta breads
  • 4 tablespoons Cooking oil
  • 100 grams pine nuts
  • 4 garlic cloves, crushed
  • 500 grams young spinach
  • 100 grams Manchego cheese, grated
  • 100 grams raisins, chopped
  • Salt and pepper
