COCO WITH SPINACH AND GOATS' CHEESE

Preparation Method :

  • Make the bread base. Put the flour, salt and yeast in a bowl with oil.
  • Add hot water and mix to soft dough, adding a little more water if the mixture feels dry.
  • Turn out on to a floured surface and knead for 10 minutes until smooth and elastic.
  • Put it in a lightly oiled bowl, cover with clingfilm and leave to rise until doubled in size.
  • Oil a baking sheet. Punch the dough to deflate and turn it out on to a floured surface.
  • Roll it out to a square and transfer to the baking sheet.
  • Heat oil in a frying pan and gently fry the mushrooms, garlic and pine nuts for 3 minutes.
  • Add the spinach and cook until wilted. Sprinkle with the paprika and a little salt.
  • Turn the mixture on to the base, spreading it in an even layer. Dot the cheese over the spinach.
  • Sprinkle with extra paprika and bake in a preheated oven for 20 minutes until golden.

INGREDIENTS

  • 300 grams strong plain flour
  • 1 teaspoon salt
  • 2 teaspoons easy-blend dried yeast
  • 100 ml Cooking oil
  • 200 grams mushrooms, thinly sliced
  • 6 garlic cloves, thinly sliced
  • 100 grams pine nuts
  • 500 grams young spinach leaves
  • 1 teaspoon mild sweet or smoked paprika, plus extra to sprinkle
  • 200 grams soft goats' cheese
  • Salt
