Preparation Method :
- Cook the potatoes in lightly salted boiling water for 5 minutes until slightly softened. Drain.
- Cut the chorizo into 1 inch chunks.
- Heat the oil in a large frying pan.
- Add the potatoes and fry gently, stirring frequently, for 8-10 minutes until they are just leginning to turn golden.
- Remove the potatoes with a slotted spoon.
- Add the remaining oil and the chorizo to the pan and fry for 5 minutes until lightly browned.
- Remove the pan from the heat and stir in the sherry.
- Cook gently, stirring frequently, until the sherry has mostly evaporated.
- Return the potatoes to the pan, check the seasoning and heat through for 2 minutes before serving.
