Preparation Method :
- Put the whole peppers in a roasting tin and cook in a preheated oven, for 30 minutes or until they are soft and the skins are browned.
- Turn them into a bowl, cover with clingfilm and leave to cool.
- Meanwhile, blitz the almonds in a food processor until ground.
- Add the basil leaves, harissa, oil, honey and a little salt and blend to a smooth paste, scraping the mixture down horn the sides of the bowl.
- Pull the stalks horn the peppers and peel away the skins.
- Drain the juices from inside the peppers and cut them in half, discarding the seeds.
- Dry the peppers between several sheets of kitchen paper.
- Line a loaf tin with clingfilm. Place a single layer of yellow pepper in the base, cutting to fit where necessary.
- Spread with a teaspoonful of" the paste Cover with a layer of red pepper and spread with more paste.
- Repeat the layering, finishing with a layer of peppers. Chill until ready to serve.
- Invert on to a board and peel away the clingfilm.
- Use a sharp knife to cut the terrine into squares.
