ARTICHOKE HEARTS WITH LEMON AND MINT

Preparation Method :
- Thoroughly drains the artichokes and dries them by arranging them, upside down, on several layers of kitchen paper.
- Leave for about 10 minutes, and then cut into thin slices.
- Heat the oil in a frying pan and fry the artichokes for about 3 minutes until they are beginning to brown.
- Turn them over and scatter with the garlic, lemon rind, sugar and mint.
- Cook for a further couple of minutes.
- Turn the artichokes into a serving dish or 4 small dishes.
- Pour the remaining oil and the lemon juice into the pan with a little salt and pepper and stir, off the heat, until mixed.
- Pour over the artichokes and chill for a couple of hours before serving.

- 750 grams can or jar artichoke hearts
- 6 tablespoons Cooking oil
- 2 garlic clove, crushed
- Finely grated rind of 2 lemon
- 1 teaspoon caster sugar
- 4 tablespoons chopped mint
- Salt and pepper
