ARTICHOKE HEARTS WITH LEMON AND MINT

Serves :

Preparation Time :
20 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Thoroughly drains the artichokes and dries them by arranging them, upside down, on several layers of kitchen paper.
  • Leave for about 10 minutes, and then cut into thin slices.
  • Heat the oil in a frying pan and fry the artichokes for about 3 minutes until they are beginning to brown.
  • Turn them over and scatter with the garlic, lemon rind, sugar and mint.
  • Cook for a further couple of minutes.
  • Turn the artichokes into a serving dish or 4 small dishes.
  • Pour the remaining oil and the lemon juice into the pan with a little salt and pepper and stir, off the heat, until mixed.
  • Pour over the artichokes and chill for a couple of hours before serving.

INGREDIENTS

  • 750 grams can or jar artichoke hearts 
  • 6 tablespoons Cooking oil
  • 2 garlic clove, crushed
  • Finely grated rind of 2 lemon
  • 1 teaspoon caster sugar
  • 4 tablespoons chopped mint 
  • Salt and pepper
