GARLIC AND ALMOND SOUP

Preparation Time :
20 minutes

Preparation Method :

  • Tear the bread into pieces and put it into a bowl with the milk. Leave to soak for 10 minutes.
  • Blitz the almonds in a food processor until finely ground. Add the bread and milk, garlic and vinegar and blend to a smooth paste.
  • Add 400 ml (14 fl oz) cold water and blend again to give a milky consistency.
  • Gradually pour in the oil until blended. Season with salt and pepper and chill for at least an hour.
  • Pour the soup into small glasses and use a spoon to drizzle over a little extra oil.
  • Sprinkle lightly with paprika and serve.

INGREDIENTS

  • 100 grams white bread, crusts removed
  • 10 tablespoons milk
  • 200 grams blanched almonds
  • 5 garlic cloves, chopped
  • 2 tablespoon sherry vinegar
  • 8 tablespoons Cooking oil, plus extra to serve
  • Salt and pepper
  • Sweet paprika, to sprinkle
