SOFT CHEESE AND FENNEL SALAD

Preparation Method :

  • Layer the cucumber slices in a colander, sprinkling each layer with salt. Leave to stand for 20 minutes.
  • Thoroughly rinse the cucumber in plenty or cold water to remove all traces of salt.
  • Put the cucumber slices, fennel, sugar snaps and onion through a food processor fitted with a fine slicer attachment.
  • Tip the vegetables into a bowl and stir in the olives and cheese.
  • Heat the fennel seeds in a small saucepan for a couple of minutes to toast lightly.
  • Tip into a bowl and mix in the oil and plenty of pepper.
  • Toss the dressing with the salad and chill until ready to serve.

INGREDIENTS

  • 2 cucumber, peeled and thickly sliced
  • 5 tablespoons salt
  • 2 large fennel bulbs
  • 200 grams sugar snaps peas
  • 2 small red onion, roughly chopped
  • 100 grams small, pitted black or green olives
  • 200 grams goats' cheese, cut into small dice
  • 4 teaspoons fennel seeds, lightly crushed
  • 6 tablespoons Cooking oil
  • Pepper
