Preparation Method :

  • Heat the oil in a large frying pan and gently fry the aubergine, stirring frequently, for 10 minutes until browned. Slide on to a plate.
  • Add the peppers and onion to the pan with the remaining oil and fry gently for 5 minutes.
  • Return the aubergine to the pan with the garlic and tomatoes.
  • Cover with a lid or foil and cook gently for 15 minutes until the vegetables are soft and pulpy.
  • Remove the lid and let the mixture bubble for a couple of minutes to boil off any juices. Season to taste and leave to cool slightly.
  • Line 6 dariole moulds, each with clingfilm and pack in the mixture, pressing it down with the back of a spoon. Chill until reach to serve.
  • Invert the moulds on to small plates and peel away the clingfilm.
  • Drizzle with the herb oil to serve.

INGREDIENTS

  • 6 tablespoons Cooking oil
  • 2 medium aubergine, cut into small chunks
  • 4 red peppers, cored, deseeded and cut into small chunks
  • 2 orange or yellow pepper, cored, deseeded and cut into small chunks
  • 2 onion, chopped
  • 4 garlic cloves, crushed
  • 8 tomatoes, skinned and chopped
  • Salt and pepper
  • Fresh Herb Oil, to serve
