QUAILS' EGGS WITH HERB SALT

Preparation Time :

Cooking Time :
10 minutes

Preparation Method :

  • Put the eggs in a small saucepan and covers with just-boiled water. Return to the boil and cook for 2 minutes.
  • Drain the eggs, run them under the cold tap to cool, and then shell them.
  • Mix the salt with the herbs and pepper.
  • To serve, put the salt in tiny dishes.
  • Serve on individual plates with the eggs for dipping.

INGREDIENTS

  • 30 quails' eggs, at room temperature
  • 30 grams coarse sea salt
  • 4 teaspoons finely chopped rosemary
  • 2 teaspoons finely chopped thyme
  • 1 teaspoon freshly ground black pepper
