MACKEREL ESCABECHE

30 minutes

Preparation Method :

  • Use tweezers to remove any stray bones from the mackerel then arrange the fillets, skin sides down, in a shallow oven proof dish.
  • Heat the oil in a frying pan and gently fry the shallots until softened but not browned.
  • Add the garlic and cook gently for 1 minute.
  • Add the bay leaves, orange rind and juice, fennel or parsley, ginger, sherry and a little salt and bring to the boil.
  • Pour over the fish and cover with a lid or foil.
  • Cook the dish in a preheated oven for 20 minutes or until the fish is just cooked through.
  • Leave to cool then chill until ready to serve.

INGREDIENTS

  • 750 grams mackerel fillets
  • 2 tablespoons Cooking oil
  • 4 shallots, thinly sliced
  • 2 garlic clove, crushed
  • 5 bay leaves
  • 4 strips of pared orange rind
  • 100 ml juice
  • 8 tablespoons chopped fennel or parsley
  • 2 tablespoon grated fresh root ginger
  • 200 ml sweet sherry
  • Salt
