Preparation Method :
- Heat the oil in a frying pan and gently fry the onion for 5 minutes until softened.
- Add the garlic and fry gently for 1 minute.
- Stir in the chopped tomatoes, tomato paste and oregano and bring to the boil.
- Reduce the heat and cook gently for about 10 minutes until the sauce is reduced and pulpy.
- Meanwhile, scale the fish by running a thick bladed knife from tail to head to scrape off the scales.
- Wok in a piece of crumpled paper or carrier bag to stop the scales from flying everywhere. Gut the fish and remove the heads.
- Wash and pat dry on kitchen paper.
- Turn the tomato mixture into a shallow ovenproof dish and lay the fish on top.
- Drizzle with the remaining oil. Cover with foil and bake in a preheated oven for 40 minutes until the fish is cooked through.
- Serve warm or cold.

- 500 grams tomatoes, skinned and roughly chopped
- 4 tablespoons sun-dried tomato paste
- 4 tablespoons chopped oregano
- 10 large fresh sardines
- Salt and pepper
