Preparation Method :
- Drain the beans, put them in a saucepan, cover with cold water and bring to the boil.
- Boil for 10 minutes, then drain. Tear the fish into small pieces, discarding the skin and bones.
- Heat the oil in a large saucepan and fry the onions for 5 minutes until softened.
- Add the drained beans, carrots, bay leaves, thyme and flaked fish.
- Add the stock and bring to the boil.
- Reduce the heat, cover with a lid and cook on the lowest heat for about 1 ½ - 2 hours or until the beans are very tender.
- Season the stew with pepper and spoon it into small dishes.
- Top with spoonfuls of aioli and serve hot.

- 6 tablespoons Cooking oil
- 4 onions, chopped
- 300 grams small carrots, sliced
- 4 bay leaves
- Several sprigs of thyme

- Aioli, to serve
