RABBIT WITH SERRANO HAM AND SAGE

Preparation Time :

Cooking Time :
15 minutes

Preparation Method :

  • Halve any larger pieces of meat so all the pieces are roughly the same size.
  • Place them on a board between 2 layers of cling film and beat with a rolling pin until very thin.
  • Season both sides of the meat with salt and pepper.
  • Tear the ham into pieces about the same size as the meat and place a piece of ham over each one, flattening them down to secure in place.
  • Finely shred the sage leaves. Melt the butter with the oil in a large frying pan.
  • Add the chopped sage and fry for a few seconds. Add the meat, ham sides down, and fry for 2 minutes until lightly browned.
  • Turn the pieces over and fry for a further minute or until cooked through.
  • Remove the meat with a slotted spoon and keep it warm.
  • Add the sherry to the pan juices and let the mixture bubble up.
  • Pour over the meat to serve.

INGREDIENTS

  • 500 grams lean boneless rabbit
  • 100 grams Serrano ham
  • 20 large sage leaves
  • 50 grams butter
  • 4 tablespoons Cooking oil
  • 100 ml medium sherry
  • Salt and pepper
