RABBIT WITH SERRANO HAM AND SAGE

Preparation Method :
- Halve any larger pieces of meat so all the pieces are roughly the same size.
- Place them on a board between 2 layers of cling film and beat with a rolling pin until very thin.
- Season both sides of the meat with salt and pepper.
- Tear the ham into pieces about the same size as the meat and place a piece of ham over each one, flattening them down to secure in place.
- Finely shred the sage leaves. Melt the butter with the oil in a large frying pan.
- Add the chopped sage and fry for a few seconds. Add the meat, ham sides down, and fry for 2 minutes until lightly browned.
- Turn the pieces over and fry for a further minute or until cooked through.
- Remove the meat with a slotted spoon and keep it warm.
- Add the sherry to the pan juices and let the mixture bubble up.
- Pour over the meat to serve.

- 500 grams lean boneless rabbit
- 100 grams Serrano ham
- 20 large sage leaves
- 50 grams butter
- 4 tablespoons Cooking oil
- 100 ml medium sherry
- Salt and pepper
