RABBIT WITH PANCETTA AND LENTILS

Preparation Method :

  • Rinse the lentils thoroughly and put them in a saucepan with plenty of boiling water.
  • Return to the boil, cook for 5 minutes, then drain.
  • Heat the oil in a saucepan and gently fry the onion and pancetta for 5 minutes.
  • Add the rabbit and fry for 5 minutes until the meat is beginning to brown.
  • Stir in the garlic and cinnamon, bell pepper and add the stock.
  • Bring to the boil, and then reduce the heat to a gentle simmer.
  • Add the lentils, cover with a lid and cook gently for 20-30 minutes until the rabbit and lentils are tender.
  • Stir in the cabbage and broccoli cook for a further 5 minutes.
  • Check the seasoning and serve hot in little dishes.

INGREDIENTS

  • 200 grams Puy lentils 
  • 100 grams broccoli
  • 1 medium sized yellow bell pepper
  • 6 tablespoons Cooking oil
  • 3 onion, finely chopped
  • 100 grams pancetta, diced
  • 750 grams lean rabbit, cut into small chunks
  • 4 garlic cloves, crushed
  • 500 ml chicken or vegetable stock
  • 250 grams green cabbage, finely shredded
  • Salt and pepper
