PRAWNS WITH GARLICKY CRUSHED BEANS

Preparation Method :
- Heat the oil in a saucepan and gently fry the onion for 5 minutes. Add the garlic and fry for a further minute.
- Tip in the beans and use a potato masher to crush them.
- Add the stock and plenty of black pepper and leave in the pan, ready to reheat.
- Dust the prawns with the paprika and a little salt.
- Heat the remaining oil in a frying pan and fry the prawns lightly on both sides until cooked through.
- Stir in the tomato paste, oregano, honey and water.
- Heat the beans in the saucepan until just hot and heat the prawns until the juices start to bubble.
- Spoon the bean mixture into small dishes, pile the prawns on top and pour over the cooking juices.

- 8 tablespoons Cooking oil
- 2 large onion, finely chopped
- 5 garlic cloves, crushed
- 500 grams cannellini, haricot or butter beans, drained
- 200 ml vegetable or fish stock
- 500 grams shelled raw prawns
- 1 teaspoons mild sweet paprika
- 2 tablespoons sun-dried tomato paste
- 1 tablespoons chopped oregano
- 4 teaspoons clear honey
- Salt and pepper
