OCTOPUS WITH GARLIC DRESSING

Cooking Time :
2 hours

Preparation Method :

  • Put the onion, cloves and salt in a large saucepan and add 2 lines cold water. Bring to the boil.
  • Using tongs, dip the octopus in and out of the water about 4 times, returning the water to the boil before re-dipping, then immerse the octopus completely in the water.
  • If there are several pieces of octopus, dip them one at a time.
  • Reduce the heat and cook the octopus very gently for 1 hour.
  • Check to see whether it's tender, if necessary cooking it for another 15-30 minutes. Leave it to cool in the liquid.
  • Drain the octopus and cut the flesh into bile sized pieces. Turn them into a bowl.
  • Mix the oil with the garlic, parsley, vinegar and salt and pepper and add to the bowl.
  • Mix well, cover and chill for several hours or overnight.
  • Serve with bread for mopping up the juices.

INGREDIENTS

  • 2 onions cut into wedges
  • 2 teaspoons whole cloves
  • 750 grams prepared octopus
  • 10 tablespoons Cooking oil
  • 4 garlic cloves, crushed
  • 8 tablespoons chopped parsley 
  • 2 teaspoons white wine vinegar 
  • Salt and pepper
