MOORISH PORK PINCHITOS

Preparation Time :
40 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Trim any fat from the pork and cut the meat into thin slices.
  • Mix together the cumin seeds, cayenne, cinnamon and salt and pepper and rub the mixture over both sides of the pork slices.
  • Leave to marinate for at least 15 minutes.
  • Halve the lemon and scoop out and discard the pulpy centers.
  • Finely chop the rest and mix with the garlic and parsley in a bowl.
  • Heat a large, heavy-based frying pan or griddle until very hot.
  • Brush one side of the pork slices with oil and fry, oiled sides down, for 3 minutes.
  • Brush the upper sides with more oil, turn the slices and cook for a further 3 minutes or until cooked through.
  • Thread the meat on to small wooden or metal skewers, one piece per skewer.
  • Serve sprinkled with the lemon mixture.

INGREDIENTS

  • 500 grams piece skinless pork loin 
  • 4 teaspoons lightly crushed cumin seeds
  • 1 teaspoons cayenne pepper 
  • Good pinch of ground cinnamon
  • 2 pickled lemon
  • 4 garlic cloves, crushed
  • 5 tablespoons finely chopped parsley
  • 8 tablespoons Cooking oil
  • Salt and pepper
