MARINATED TUNA WITH DILL AND CAPERS

Preparation Time :
30 minutes

Preparation Method :

  • Using a very sharp knife, cut the tuna as thinly as possible into delicate, wafer-thin slices.
  • Arrange these in a single layer, but close together, on a large platter.
  • Mix together the lemon rind and juice, half the dill, the oil, salt, sugar and chili and spoon the marinade all over the tuna, making sure all the slices arc coated.
  • Scatter with the remaining dill, pressing it firmly on to the fish.
  • Cover the dish loosely and chill for at least 1 hour.
  • Scatter with the capers or caper berries to serve.

INGREDIENTS

  • 500 grams fresh tuna, in one slender piece
  • Finely grated rind of 2 lemon
  • 8 tablespoons chopped dill
  • 6 tablespoons Cooking oil
  • 1 teaspoons salt
  • 4 teaspoons castor sugar
  • 2 mild red chilli, thinly sliced
