GRIDDLED VEGETABLES

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Cut the aubergine lengthways into slices 1 cm (½ inch) thick. Slice the courgettes lengthways.
  • Snap off the woody parts of the asparagus stems.
  • Heat a large, ridged griddle pan or heavy-based frying pan.
  • Mix the oil with the oregano and salt and pepper and brush the mixture all over the vegetables.
  • Cook the vegetables in batches, starting with the aubergines, which will take about 15 minutes, turning them over halfway through cooking.
  • Push the slices to one side or transfer them to a plate and cook the courgettes and asparagus, turning once, for 5-10 minutes until tender.
  • Serve Warm.

INGREDIENTS

  • 2 aubergine
  • 4 courgettes
  • 25 asparagus spears
  • 10 tablespoons Cooking oil
  • 2 tablespoons finely chopped oregano
  • Salt and pepper
